The story of Tegal Sari begins with a young Balinese chef who carries more than just a passion for cooking. He carries a culinary legacy passed down through generations. His journey is deeply connected to his great-grandfather, who was once a royal palace chef, entrusted with preparing meals for the royal family and distinguished guests of the King at one of the traditional palaces, or puri, in Gianyar, Bali.
In those days, cooking for the royal family was not simply a profession. It was a great responsibility and an honor. Every dish had to reflect respect, tradition, balance, and the identity of Balinese culture. The knowledge of selecting ingredients, preparing spices, cooking techniques, and presenting food was carefully preserved and passed from one generation to the next.
Years later, that heritage found a new expression through the young chef who dreamed of bringing the authentic flavors of his ancestors beyond the walls of the palace and into the wider world. His dream was simple yet meaningful: to introduce the true taste of Bali to people from all over the world, and to make Balinese cuisine accessible and enjoyable for everyone.
At Tegal Sari, traditional recipes are not merely recreated — they are continued as a living heritage. Ancient techniques meet modern presentation, while the soul and authenticity of Balinese cuisine remain at the heart of every dish. One of our signature dishes is Grangasem, a traditional Balinese specialty cooked inside a length of bamboo, which draws out the aroma and character of the dish and keeps a traditional way of cooking alive.
For us, food is more than something served on a plate. It is a story. It is a heritage. It is a connection between generations. And it is a piece of Bali shared with the world. Tegal Sari was born from the belief that the best way to preserve a tradition is not simply to remember it, but to keep it alive, share it, and allow the next generation to experience it.
